Ingredients
  

  • 2 pounds Yukon Gold potatoes
  • 3 tablespoons olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon garlic powder
  • ½ teaspoon paprika
  • 1 tablespoon fresh rosemary optional

Instructions
 

  • Preheat oven to 425°F (220°C).
  • Wash and cut the Yukon Gold potatoes into bite-sized pieces.
  • In a large bowl, toss the potatoes with olive oil, salt, black pepper, garlic powder, and paprika.
  • Spread the potatoes on a baking sheet in a single layer.
  • Roast for 35-40 minutes, flipping halfway through, until golden brown and crispy.
  • Garnish with fresh rosemary and serve immediately.

Notes

💡 For extra crispiness, soak the potatoes in cold water for 30 minutes before roasting and pat them dry.
