Ingredients
  

  • 2 boneless skinless chicken breasts, thinly sliced
  • 1 tbsp olive oil
  • 1 small onion sliced
  • 1 green bell pepper sliced
  • 1 red bell pepper sliced
  • 2 cloves garlic minced
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ tsp smoked paprika
  • 4 slices provolone cheese
  • 4 hoagie rolls

Instructions
 

  • Prepare the chicken: Heat olive oil in a large skillet over medium-high heat. Add the sliced chicken and season with salt, pepper, and smoked paprika. Cook for 5-7 minutes until golden brown.
  • Sauté the vegetables: Add the sliced onions, peppers, and garlic to the skillet. Cook for another 5 minutes, stirring occasionally, until the vegetables are tender.
  • Melt the cheese: Reduce the heat to low, place the cheese slices on top of the chicken and vegetables, and let them melt for about 1 minute.
  • Assemble the sandwiches: Toast the hoagie rolls if desired, then fill them with the cheesy chicken and pepper mixture.
  • Serve hot and enjoy!

Notes

  • You can substitute provolone with mozzarella or cheddar.
  • Add mushrooms for extra flavor.
